Recipe: Denise's harvest stew
One pot, forty servings, and whatever the garden gave you.
This is the stew Denise makes when the garden is overflowing. Scale it down for a family, or up for a block party.
For forty servings
- 6 onions and a whole head of garlic.
- 10 pounds of whatever vegetables you have.
- 4 cans of beans, drained.
- 2 gallons of stock.
- Salt, pepper, and a bay leaf or two.
How to make it
- Soften the onions and garlic in oil.
- Add the hardest vegetables first, then the soft ones.
- Add beans and stock, and simmer for an hour.
- Taste, season, and taste again.
It's never the same stew twice. That's the point.
